Tamara Petterson declares Nigeria’s Jollof as the best

Tamara Petterson is an award chef and entrepreneur known for her bold flavours and creative take on Southern Cuisine. Beyond the kitchen Chef has expanded her brand of signature cookware, spice brands and spices bringing her signature flavours into homes across America. She spoke in a brief but concise interview after her masterclass at the Guaranty Trust Holding Company (GTCO) Food and Drink Festival that held in Victoria Island, Lagos, Write Editor Gentechnews, Tony Nwakaegho.

 

The question around the world is who makes the best jollof rice rice, Is it Ghanaian or Nigerians?

I want to say without any doubt that Nigerians are often better. If I have preference, I prefer only Jambalaya because the meats are already in it. I don’t want the meat on top. I am a lazy eater and want the meat on top close to a layer of flavour not necessarily seen. However, jollof rice is really good.

What is the most rewarding product among your other products?

I will say that cookware is the most rewarding product out of my products. I will say that is the most rewarding because it is inspiring and upscaling. We got huge workers and huge products and those products sell.

What is your experience like?

In a place where they told me to make a desert for them, and I want to make palm cake butter. Meat doesn’t go on desert and I was mad at it because it was the most challenging and I got eliminated.

What do you have to say about chicken?

To me chicken exemplifies love, so when you are milling it, seasoning it, frying it and putting it into the bowl. You can make food out of love of stuffs in the world, but you cannot live without love and you cannot live without food. So, you can combine the two to show the people that you love and how much you love them with what you did.
